Chicken
- Marinate your chicken in the olive oil, basil, garlic, lemon juice, salt and pepper for at least 2 hours or up to 24 hours. Did you forget to marinate it? No worries! Just sprinkle with some salt, pepper, garlic powder for a little flavor.
- Grill your chicken. We use a grill pan on our stove. You can also just saute this in a pan. Once cooked, chop your chicken into bite size pieces.
Vinaigrette
- Whisk together olive oil, balsamic vinegar, honey, mustard, salt and pepper to taste. Store in fridge until ready to use.
Assemble Salad
- Either microwave or saute your frozen corn. I personally like to cook it in a pan to get a little char on it. But microwave works too!
- Assemble your salad! Drizzle with vinaigrette.
