Simple Meal Plan

It’s Friday and that means it’s time for a new simple meal plan! If you are new here, I’m a mom of six and with this economy, I’ve found it more important than ever to meal plan. My goal is to have meals that are simple to cook, yummy and kid-friendly, and intentionally planned with a budget in mind. I hope this week’s simple meal plan can help you in your own meal planning! 🙂

Breakfasts, Lunches, and Snacks

Breakfast: oatmeal sweetened with pure maple syrup and Apple Butter, toast with jelly and fruit, bars for busy mornings.

Lunch: Leftovers, peanut butter and jelly sandwiches, salads, protein shake for mom, fruit, veggies.

Snacks: fruit, gummy snacks.

Dinners

Monday: Chicken Rice Bowls. This has been a repeater here lately. It’s easy for me to make, very budget-friendly, and can make lots of leftovers for my husband to take to work. Rotisserie chicken (shredded and lime juice, salt and pepper added), rice, black beans (rinsed and drained), corn (drained and cooked in my cast iron), shredded cheddar cheese, sour cream, guacamole, etc. Put rice in bottom of bowl and add your toppings.

Tuesday: This will be our Aldi pizza night. It’s our homeschool community day and most of the time, we are tired and need something easy for dinner.

Wednesday: Vegetable Soup with Mexican Cornbread. I brown ground beef and drain fat. Add it to crockpot with your favorite veggies. Normally, it takes six or so cans of veggies and then fill top with chicken stock. Add corn, bacon, jalapeños to your cornbread to make Mexican cornbread.

Thursday: Baked potatoes, salad, sandwiches. This has become a popular meal at our house. First, I cook the potatoes in the crockpot and then lay out all the fixings: chopped lettuce, tomato, onion, cheese, bacon, sandwich meat, whatever else you want, and everyone can build their own meal.

Friday: Chicken Pot Pie. I buy pre-maid pie crust. Either use rotisserie chicken, canned chicken, cook your own chicken, drain your veggies of your choice: carrots, potatoes, green beans, etc, add cream of chicken soup, top with your pie crust. Cut some slits in the top and, then cook until top is browned.

Saturday: Tacos and Black Beans. I normally use ground beef, taco seasonings, hard and soft shells, lettuce, tomato, onion, shredded cheese. I drain black beans and cook them as a side. However, you can switch this meal up to your family’s likings by using chicken, steak, shrimp, etc.

Sunday: Roman Chicken over Rice (recipe linked). This recipe makes me smile becauseI learned how to cook when I was on maternity leave with my first child by watching Food Network. This recipe is from those days.
