Simple Meal Plan

Happy Friday, friends! I’m sharing our family’s simple meal plan for next week! We’ve been trying lots of new recipes around here and trying to figure out which ones are keepers. My goal is to serve paleo-type meals that we are excited for each night.

Breakfast, Lunch, & Snacks

For now, breakfast bars are the winner for the kids. I don’t normally eat breakfast. Yesterday, I made a big ole salad and had different toppings and it was a big hit. My plan is to rotate between the salads and charcuterie-type lunches with carrots, cucumbers, bell peppers, fruit, salami, lunch meat, etc. Snacks are chips and salsa, apples, and gummies.

The Dinners

Monday: Chicken Rice Bowls. These are a favorite for some. I shred up a rotisserie chicken, warm some corn, drain and rinse black beans, shred some cheese, and make rice. People can assemble their own bowls.

Tuesday: Papa John’s pizza. This is the meal Jackson has requested for his birthday. I plan on getting a gluten free crust option for myself.

Wednesday: Loaded Baked Potatoes and Salads. This one helps out the budget and is super easy. I cook my potatoes in the crock pot and make all the fixings and let people assemble to their liking.

Thursday: Roman Chicken over Rice. This has become such a favorite here. It is so delicious!

Friday: Tacos with Black Beans. This is a repeater here. We do beef tacos, but you can try this yummy shrimp one to change things up.

Saturday: Chicken Sheet Pan. We tried this one last week. I will loosely use the recipe linked, but we weren’t big fans of the cinnamon rub used on the chicken so I’m going to change that up. Everyone was a big fan of the homemade honey mustard drizzle though. Imagine that! lol

Sunday: Burger Bowls. I made this two weeks ago and we are still talking about it! So good!!
