Simple Meal Plan

Happy Friday, friends! I’m here to share our simple meal plan for next week! I hope you can get an idea or two (or maybe an entire week’s worth!). I’m trying to stick to a mainly Paleo diet, which has actually went really well with everyone in the family. My goal is always to serve food we are actually excited about (makes going out to eat less tempting!) and recipes that are simple.

Breakfasts, Lunches, and Snacks

Breakfasts have mainly been bars. This isn’t my favorite option for the kids, but our chickens are free range and they are laying their eggs in a spot that we can’t seem to find. I try to find options that are closer to protein bars than pop tarts for them, but still, more sugar than I’d like. Bars do keep things simple in the mornings and are the only option that everyone seems to be happy with. Lunches have been big salads or charcuterie style with loads of veggies, fruits, meats, etc. Snacks are usually an apple or gummy snacks.

Dinners

I’ve been really happy with our dinners lately. I feel like I have some really good options that everyone in the house seems to enjoy.

Monday: Chicken Rice Bowls. I buy rotisserie chicken and shred it, marinate it in lime juice, salt and pepper. Make rice. Rinse and drain some black beans. Drain a can of corn and then warm it up in a pan and char it a little. Shred some cheese. Also, you could serve this with sour cream, avocado, etc.

Tueday: Aldi Pizza. This is our homeschool community day and there’s just something nice about knowing all I have to do is pop a couple of Aldi pizzas in the oven. A lot of the kids actually prefer the cauliflower crust option.

Wednesday: Paleo Zuppa Toscana Soup. This soup is so hearty and delicious. It works great when you buy a big bag of potatoes at Sam’s or Costco and you can use the potatoes in other meals for the week (baked potato night and sometimes Burger Bowl night).

Thursday: Tacos and Black Beans. We normally go with beef tacos, but here’s a great shrimp taco recipe to try!

Friday: Roman Chicken over Rice. Our family’s new favorite meal.

Saturday: Chicken Nachos. It’s football day! We are going to buy some wings and I’ll cook these nachos for a fun munching spread! The nachos are a meal in itself though!

Sunday: Baked Potatoes and Salads. Rinse potatoes, pierce with fork, wrap each one in aluminum foil, and cook in the crockpot all day. Make some bacon, chop up some ham and turkey, shred cheese, black olives, etc for both potato and salad toppings!
