Simple Meal Plan

Hey Friend! Welcome to a new week of our simple meal plan! This week looks a little different for us because we are hosting two events at our house. We are hosting Supper Club (I’m hoping to have a post about Supper Club up soon!) Friday night and another family joining us for dinner on Saturday! Obviously, that means my budget is higher for this week, but my goal is still to be: intentional, simple, and yummy!

Breakfast, Lunches, & Snacks

Breakfasts: I rotate oatmeal (sweetened with pure syrup and Apple Butter), toast and fruit, and I buy bars for busy church or homeschool community day mornings.

Lunch: Salads, wraps, or protein shakes for me. For the kids, pb&j with fruit, carrot sticks, cucumbers.

Snacks: Fruit. Gummy snacks.

Dinners

Monday: Chicken Chipotle Bowls. This has become a new favorite around here. They make really good leftovers. Shredded rotisserie chicken, rice, black beans, corn, guacamole.

Tuesday: Loaded baked potatoes, salads, croissant sandwiches. This is our homeschool community day. I plan on prepping the potatoes the night before and start the crockpot before we leave for CC. When we come home, I’ll airfry some bacon, chop up some lettuce, tomatoes, and other toppings.

Wednesday: Spaghetti, salad, garlic bread. This one pretty much explains itself. It’s normally a weekly rotator at our house.

Thursday: Stromboli and salad. This is a new recipe for us. You can find it here.

Friday: Supper Club (I can’t share just yet what we are cooking. But be sure to check out my IG stories on Friday to see what we are up to!

Saturday: This is the day we are hosting another large family at our house! I think there will be around 16 or so of us! We are doing hamburgers, hotdogs, fruit, and chips.

Sunday: Tacos! We will be doing the normal ground beef tacos with chips and salsa. But, if you are looking for a fancier taco recipe, check here.
