Simple Meal Plan

Hey Friend! I’m so glad you’re here! I’ve been sharing my simple meal plan for the last few weeks and I’ve hoped you found them helpful. My goal with creating them for myself is to keep it simple, delicious, and intentional within my budget. This means we have what I call “repeater” meals, meals that we know we love that fit within our budget. Right now repeater meals are chicken rice bowls (because they make lots of leftovers that my husband can take to work), tacos, and Aldi pizza. In case you don’t have an Aldi near you, it’s a grocery store that has great and very large pizzas that you take home and bake. 🙂

Breakfasts, Lunches, and Snacks

I keep these meals pretty simple too. Breakfasts are toast & fruit, oatmeal, and bars for busy mornings. Lunches are leftovers, pb&j sandwiches, fruit, and protein shakes or salads for me. Snacks consist of fruits, gummy snacks, etc.

The Meal Plan

Monday: Chicken Rice Bowls. I use rotisserie chicken that I shred and marinate in lime juice, salt and pepper. Cook your favorite rice. Rinse and drain some black beans. Warm up some drained canned corn on the stove. Shred some cheese. Add sour cream or guacamole. Other ideas for toppings: bacon, onions, tomatoes. You get the idea.

Tuesday: Aldi Pizza. That’s take and bake pizza from my favorite grocery store.

Wednesday: Chicken Pot Pie. This is a meal that’s leftover from last week. Use cooked chicken and combine with your favorite canned (drained) or frozen veggies. Mix with cream of chicken. Top with a refrigerated pie shell or make your own. You can also top with biscuits.

Thursday: Hamburgers and Potato Fries. For potato fries, I slice up potatoes, drizzle olive oil and season them and then cook in oven.

Friday: Tomato Bisque and Grilled Cheese or Quesadillas. I’ve linked a great tomato bisque recipe that I go by. I add lots more bacon though. 🙂

Saturday: Shrimp and Grits. Again, linking one of my favorite and easy shrimp and grits recipes.

Sunday: Tacos and Black Beans. This is a repeater here at our house. We use ground beef, but you can switch it out with another protein! If you want to get fancy, here’s a great shrimp taco recipe that I love.
